These apple fritters are crispy on the outside, soft and filled with juicy apple pieces on the inside, and finished with a sweet, glossy glaze. Perfect for breakfast or a sweet treat!
In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
In another bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the chopped apples.
In a deep skillet or pot, heat about 2 inches of vegetable oil to 350°F (175°C).
Using a spoon or small scoop, drop the batter into the hot oil, a few fritters at a time. Do not overcrowd the skillet.
Fry the fritters for about 2-3 minutes on each side, or until golden brown and cooked through.
Use a slotted spoon to remove the fritters and drain on a paper towel-lined plate.
In a small bowl, mix together 1 cup of powdered sugar and 2-3 tablespoons of milk until smooth.
While the fritters are still warm, dip them into the glaze, allowing any excess to drip off.
Place the glazed fritters on a wire rack to set.
